Thanks to Nicolau’s tips and explanations, we can overcome our fear and laziness in the kitchen and understand why cooking is a political act worth doing every day.

From simple preparations such as sofrito (base sauce), omelettes and escalivada (roast vegetables), to dishes that elicit applause such as croquettes with roast meat, pisto (ratatouille) and fricandó (beef stew).
